Moving beyond portion control, scales have become an indispensable addition to one’s assortment of kitchen equipment.

As a baker, if you measure ingredients by volume or quantity you can significantly change the taste and texture of the end result. For instance, the amount of flour you measure will vary depending on if you use the sweep or scoop method, brand of measuring cups as well humidity and altitude – flour can “swell”.

Using weight is more exact and will yield more consistent results.
